At the end of the January The 30 Clean challenge I brought Delighted Momma’s raw strawberry cheesecakes to the potluck. They were amazing even though I did not let them freeze as long as they needed to be. When Stephanie, owner of The Dailey Method – RB/Poway, asked me to whip them up for her daughters Christening I could not wait! Any excuse to make this raw treat sounded amazing to me! This time I froze them in silicone baking cups like Lindsey suggests. It worked way easier and they make the perfect bite! For the Christening I made not only Delighted Momma’s Raw Strawberry Cheesecakes but her Paleo Banana Cream Pie as well!
I had a little over a half dozen plainly topped cheesecakes so I decided to blend up a triple berry sauce for the top. These were even more amazing and the vibrant berry colors made them even more delightful! If you haven’t visited Delighted Momma’s blog you should head on over! Triple Berry Topping:
2-3 Strawberries
2 TB Blueberries
3-4 Blackberries
1/4 cup coconut oil
1 TB raw honey
Blend all the ingredients in a food processor until you have a semi-smooth consistency. Spoon on your cheesecakes, freeze & enjoy!
