When I go home to visit my parents I always look forward to their cooking. I mean, who doesn’t? It always reminds me of when I got to spend two years during college before we got married when I moved home to finish school. I would always (and still do) kid with my Mom by asking if she was making her chicken skillet for dinner.
It’s just one of those meals my Mom makes that is simple, packed with amazing flavor and everyone loves it. My Mom is very brand loyal (something else I always give her a hard time about), she has been cooking her spaghetti sauce and Italian tomato chicken skillet with Hunt’s tomatoes since I can remember. If you were to look at her outdoor pantry shelves you will see them lined with every variety of Hunt’s tomatoes. At any given time she can create either recipe because she always has everything on hand. Using Hunt’s fresh, flash-steamed California grown tomatoes makes a difference in her tomato recipes, as much as I hate admitting that it really does!
I don’t go home as much as I would like. My Mom comes down to visit us a lot but I usually do the cooking. I have been missing her Italian tomato chicken skillet so I decided to make it for the first time for my family over the weekend. While we were out running errands at Walmart I was able to pick-up all the ingredients needed for the skillet plus some wine and a salad to make it a complete meal at home. This made for a great date night in with the kids plus it reminded me of the simpler days of living at home. Isn’t it weird how a meal can do that?

Add Grandma’s Italian tomato chicken skillet to your weekly menu!
Italian Tomato Chicken Skillet
Ingredients:
1 can Hunt’s diced tomatoes
1 TB Hunt’s tomato paste
1 package Egg noodles (or pasta of choice)
5-6 Chicken Tenders
2 TB Italian Seasoning
1 onion, sliced into rings
4-6 garlic cloves, minced
3 TB Extra Virgin Olive Oil
Directions:
- Heat the olive oil in a skillet. Add in onions and sauté until they become soft and translucent.
- While the onions are cooking bring water to a boil for the pasta.
- Next, add the garlic into the skillet and let it become fragrant. Place the chicken tenders on top of the onions and garlic. Sprinkle 1 TB of Italian Seasoning on top of chicken. Sauté the chicken for a few minutes and then flip. Add the remaining seasoning and then top with Hunt’s diced tomatoes and paste. Cover with a lid and cook for 15 minutes or until chicken is cooked through.
- While the chicken is cooking boil the pasta until al dente. Serve your Italian tomato chicken over the pasta and enjoy!
