What I am Thankful For. . .
Today, well, the first fifty-four minutes of today has been a relief thus far. I just got home from spending four hours in the hospital with my Grandmother. She is fine, but she will be recovering as she fell out of the shower and laid on my bathroom floor for five-and-a-half hours until Jim finally came home to rescue her. So, this post is just for me to get out there what I am thankful for right at this moment.
* The pouring rain beating down on my lil house. It sounds amazing!
* My husband who took care of my Grandma today and me unconditionally
* The smell of apples and spice
* My Mom calling me today cracking up at herself for locking herself out of the house, and sitting under the house keeping herself in a warmer spot and finding an easel I bought Ethan years ago, but to her it was like Christmas.
* My Grandmother’s eyes, which tell a lifetime of love and sadness.
* My life vs. the lives of the ladies on the “Real housewives” but I still watch anyway.
* Spending three days at home with the entire family, in the SNOW!
Of course, there are more, but for now there ya go. Try it yourself! Go each day and ask yourself, “what am I thankful for?”
Pulled Pork Sammies
Well folks, I finally made pulled pork. I have always wanted to do the deed myself but I never brought myself to do it. Now, I don’t know why because seriously it was the easiest meal I have made in the longest time. All I had to do was pull out the pork, pop it in the crock pot, add some barbeque sauce and set the timer. Ten hours later when I returned home from work, Jim, Grandma and I had a great southern style meal without spending bookoo bucks.
Ingredients:
- Pork Shoulder Strips, I bought a package that had five strips
- 1 1/2 bottles of your favorite barbeque sauce, I used Sweet Baby Rays
- Rolls, we used two each of Hawaiian Sweet bread rolls
Directions:
- Place pork shoulder strips into a crock pot. Top with barbeque sauce and toss so they are evenly coated.
- Set crock pot to your desired time. I set mine on low for ten hours. When your ready to serve pull the meat out of the crock pot and pull a part with a fork. Serve on rolls.
- Enjoy.
Halloween
Halloween
I always have huge intentions for Halloween as it is one of my favorite holidays. I was ready to decorate our house the day after Labor Day but my Mother and Jim thought I was crazy. This year we vamped up our spooky cemetery, it looked amazing! The pictures do not do any justice, I just loved hearing every ghost and ghoul that our house “was the coolest on the block”. Jim had pulled out his mask from last year and placed a stool in the cemetery and decided to spook the kiddies without doing anything. Most of the comments were, “wow, what a cool robot”, “is that real?”. At one point he came out and stood by our front gate intimidating our passer byers as they received treats. It was really fun. I even had a dad take a picture with me and my decorations…(I am still giddy). After we passed out candy, my friend Cassie and I headed out to a party in Pacific Beach. It was fun to get dressed up and be the responsible adult that I am. Needless to say, it was a great Halloween and I am already planning next years spooks, can we say Halloween party and haunted house?
