Well folks, I am giving myself a challenge. It’s not an original concept but I have been wanting to take this challenge for over a year and now that I am no longer pregnant I can actually see it come to fruition. What I am talking about is a cupcake bake-off of my very own that will not work through an entire cookbook like Julie Powell did in Julie and Julia, but rather give myself the ultimate challenge of taking the next 90 days of maternity leave and baking sixty, yes you read correct, sixty cupcake recipes. Some of you may think I am nuts especially since I have a newborn at home to take care of but heck, I haven’t taken it easy one day since my c-section so why not start off 2010 with a bang?
As many of you can imagine, I own almost every cupcake cookbook out there. Where shall I begin? I have baked some interesting little cakes since I began Le Petite Kŭp’kāk
and I am looking to you for some inspiration.
What is your favorite cupcake combo?
Is there a flavor you have never seen and would love for me to bake?

If you want to send some of those cupcakes my way in February I’d gladly take some 🙂 We’re on a limited budget but I’d love some help with E’s birthday. I’m making a giant cupcake and was going to do a tower of 35 cupcakes to accompany it.
I actually was going to try a kid/toddler friendly recipe using mostly natural ingredients and substituting applesauce for oil and agave nectar for sugar!
Since P is on her way to 1 as well (but not quite as close!) it might be nice to try some more “healthy” alternatives.

Fun! BLACK FOREST! No one does them, no one even bakes black forest cakes anymore….but its one of the best cakes ever! I think it could be the next Red Velvet! =) Chai Tea could be good. And Coconut. But not vanilla with coconut frosting…coconut cake with cream cheese frosting and maybe some toasted coconut on top. Green Tea could be really light and yummy. Maybe Pistachio….or a green tea/pistachio combo? Have fun! I would love to try some of your baked goodies one of these days!

How fun! I think this is a great idea. Once I had kind of gotten settled into a routine with Madyson, I actually wished I had a hobby of some sort to give me some “mommy time” during the day.
I NEVER bake, but the last time I actually made cupcakes I tried a recipe that was a play on donuts and coffee…it was a lighter, donut-like cupcake with a mocha frosting…I don’t know if you’ve ever tried such a combo but even with my limited skills they turned out pretty good!
And, in response to your comment on my blog – right now our day care situation is a combination of me, my sister, my mom, my husband, and day care once a week. We found a great lady that I’m totally comfortable with, but she is down south of SDSU, and I think you are in Poway, right? We were actually looking to move up in that direction before we ended up moving to El Cajon. When we were looking up there, a friend of mine who lives in RB knows a few people who do home day care and she was going to give me some recommendations, so I could maybe get those for you if you need them!
Oh, and we should get together! Especially if you are going to be baking lots of cupcakes 😉
I have about zero San Diego friends, which means Mady doesn’t have any either!

Thanks for the comment and idea. I have only ever baked a donut cupcake that was like a crumb apple donut for Jim’s birthday in 2008.
I would love some daycare rec’s up here.
