We literally have zero complete meals in our house so this week our meals have been whipped together to use up random ingredients in our refrigerator or freezer. One night I decided to make breakfast, here’s what I did:
Vegetarian Breakfast Bake:
8-10 Strips Morning Star “Bacon” cooked and cut into strips
1 stalk of broccoli, cut into florets
1 red bell pepper, cut into pieces
1/4 cup chopped green onion
1/2 cup chopped tomato
8-10 eggs
1/2 cup almond milk
1/2 cup Parmesan cheese
1/2 cup cheddar cheese
1 teaspoon oregano
salt and pepper
1. Saute veggies (except tomatoes) in a skillet until soft and tender.
2. Whisk eggs, milk and seasonings together. Add in cheeses, tomato and bacon.
3. Grease a casserole dish and place cooked veggies along bottom.
4. Add egg mixture on top of veggies and bake for 45 minutes at 350 degrees until egg is set in the middle.
